When DH and I were pre-kids, we used to enjoy a dish called Salsa Chicken. So easy to prepare, with only three ingredients. Chicken, Salsa, Cheese. How could it go wrong? With all the fond memories we have of this meal I thought that we should introduce it to the Things, but it did not get the rave reviews that I was hoping for.
Since I am a glutton for punishment I thought I would try again with a similar version, just this one is prepared in the crock pot and the three ingredients are different by one.
Crock pot meals are so convenient since you can throw all your ingredients in and walk away. They also come in really handy when you know you won’t be home at the prime prep time for dinner. And the best part is that you can have a warm meal without heating up the oven, or the house during the hot summer months.
Salsa Chicken
2 lbs Chicken, boneless, skinless (I used boneless, skinless chicken thigh)
16 oz Salsa
1 can Cheddar Cheese soup
Place all ingredients in the crock pot, stir. Cover and cook on low 6-8 hours or until fully cooked. Stir occasionally.
Anyway, moderate success with this recipe. Thing 1 and Thing 3 approve, Thing 2 not so much. I have confidence that the day will come where I find a new recipe that will get thumbs up from all three of the Things.
